Oregon Jerky

3 pounds beef (or venison)
Salt to taste
Liquid smoke
Pepper to taste

Slice meat very thin-remove all fat. paint on some liquid smoke and salt the strips of meat generously. Place meat thus prepared in layer upon layer in a bowl . Note- sprinkle each layer with pepper. Place a plate on the meat and weight it with a quart jar of water. Let stand overnight or at least 6 hours. Lay the strips of meat on your oven racks set the top rack about 4 inches from the top of the oven and the lower rack about 4 inches from the bottom of the oven. Set oven temperature at 150 degrees and leave the meat in he oven for about 11 hours or overnight. It is a good idea to lay a foil covering on the bottom of the oven to catch any drips.
